Vegan Homity Pie



With potatoes, spinach, peas, and vegan cheese, this is a hearty and comforting vegan take on the classic Homity pie.

Ingredients:

  • 500g potatoes, peeled and diced
  • 1 tbsp olive oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 200g frozen peas
  • 200g spinach, chopped
  • 150ml vegetable broth
  • 150g vegan cheese, grated
  • Salt and pepper to taste
  • 1 vegan pie crust

Instructions:

Start by heating the oven up to 400F 200C

In salted water, boil the diced potatoes until they are soft

Remove the water and set it aside

Set a pan on medium heat and add the olive oil

The onion and garlic should be cooked until they become soft

Put in the spinach and frozen peas that have been chopped

As the peas and spinach heat up, remove from the heat

Mix in the vegan cheese, vegetable broth, and cooked potatoes

Add pepper and salt

Put the mixture into a vegan pie crust and spread it out evenly

After the oven is hot, bake the pie for 25 to 30 minutes, or until the crust is golden brown and the filling is hot all the way through

Serve hot or cold, and if you want, top with fresh herbs
