Slow Cooker Thai Red Curry Beef



This Slow Cooker Thai Red Curry Beef is a simple and tasty meal to enjoy with family and friends. It has tender beef cooked in a tasty Thai red curry sauce with coconut milk and vegetables. These are great for busy days when you want dinner to be ready when you get home.

Ingredients:

  • 5 lbs beef stew meat, cubed
  • 1 can 14 oz coconut milk
  • 1/4 cup Thai red curry paste
  • 1 red bell pepper, sliced
  • 1 onion, sliced
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon fish sauce
  • 1 tablespoon brown sugar
  • 1 tablespoon lime juice
  • 1 cup broccoli florets
  • Salt and pepper to taste
  • Fresh cilantro leaves for garnish
  • Cooked rice for serving

Instructions:

In a slow cooker, combine beef, coconut milk, Thai red curry paste, red bell pepper, onion, garlic, ginger, soy sauce, fish sauce, brown sugar, and lime juice

Stir well to combine

Cover and cook on low for 6-8 hours or on high for 3-4 hours, until beef is tender

Add broccoli florets to the slow cooker during the last 30 minutes of cooking

Season with salt and pepper to taste

Serve over cooked rice, garnished with fresh cilantro leaves
