A zesty marinade of garlic, herbs, and fresh lemon gives this Paleo Lemon Herb Chicken recipe a lot of flavor. It's a quick and healthy way to eat during the week.
Ingredients:
- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 2 teaspoons dried thyme
- 2 teaspoons dried oregano
- 1 teaspoon dried rosemary
- Zest and juice of 1 lemon
- Salt and pepper, to taste
Instructions:
In a small bowl, mix together olive oil, minced garlic, thyme, oregano, rosemary, lemon zest, lemon juice, salt, and pepper
Place chicken breasts in a shallow dish and pour the marinade over them, turning to coat evenly
Cover and refrigerate for at least 30 minutes, or overnight for best flavor
Preheat grill or grill pan over medium-high heat
Remove chicken from marinade and discard excess marinade
Grill chicken for 6-7 minutes per side, or until cooked through and no longer pink in the center
Remove from heat and let rest for a few minutes before serving
Garnish with additional lemon slices and fresh herbs if desired
