Mini Apple Pie Cookies



These cute little apple pie cookies are the perfect fall treat for a bite. They have a flaky vegan pastry crust around apples that have been spiced and made sweet. You can eat them for breakfast, as a snack, or as a dessert.

Ingredients:

  • 2 cups all-purpose flour
  • 1/2 cup vegan butter, cold and cubed
  • 1/4 cup maple syrup
  • 1/4 cup cold water
  • 2 medium-sized apples, peeled and diced
  • 1/4 cup brown sugar
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1 tbsp lemon juice
  • 1 tbsp cornstarch

Instructions:

Set the oven to 350F 175C and heat it up

Put the flour and vegan butter in a bowl and mix them together

You can use a pastry cutter or a fork to blend the butter into the flour until it looks like big crumbs

Mix in the cold water and maple syrup until a dough forms

Add the diced apples to another bowl and mix them with the brown sugar, cinnamon, nutmeg, lemon juice, and cornstarch until the apples are well covered

On a floured surface, roll the dough out to about 1/4 inch thick

Cut circles out of the dough with a cookie cutter or a small glass

On half of the circles, put a spoonful of the apple mixture

On top of each apple-filled circle, put another circle of dough and use a fork to seal the edges

Place the mini apple pies on a baking sheet that has parchment paper on it

After the oven is hot, bake for 15 to 20 minutes, or until golden brown

Let it cool down a bit before you serve
