Spicy Red Lentil Pasta



This Spicy Red Lentil Pasta is a tasty, high-protein dish that's great for a quick dinner during the week. Red lentil pasta is a healthy take on regular pasta, and the spicy tomato sauce gives it a strong kick.

Ingredients:

  • 8 oz red lentil pasta
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 small onion, diced
  • 1 red bell pepper, diced
  • 1 tsp red pepper flakes
  • 1/2 tsp smoked paprika
  • 1/2 cup tomato sauce
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions:

Cook red lentil pasta according to package instructions

Drain and set aside

In a large skillet, heat olive oil over medium heat

Add minced garlic and diced onion

Saut until fragrant and onion is translucent

Add diced red bell pepper, red pepper flakes, and smoked paprika

Cook until bell pepper is tender

Stir in tomato sauce and cooked red lentil pasta

Season with salt and pepper to taste

Cook for an additional 2-3 minutes, allowing flavors to meld together

Garnish with fresh parsley before serving
