Gluten-Free Chicken Fajita Skewers



You can make these gluten-free chicken fajita skewers in just a few minutes and they will taste great and look great. This dish is a hit with everyone because the chicken marinated in herbs and vegetables grilled to perfection.

Ingredients:

  • 1 lb boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1 red bell pepper, cut into 1-inch pieces
  • 1 green bell pepper, cut into 1-inch pieces
  • 1 yellow bell pepper, cut into 1-inch pieces
  • 1 red onion, cut into 1-inch pieces
  • 2 tablespoons olive oil
  • 2 tablespoons gluten-free fajita seasoning mix
  • Salt and pepper to taste
  • Wooden skewers, soaked in water for 30 minutes

Instructions:

Add the chicken cubes, bell peppers, and red onion to a large bowl

Pour the olive oil over the ingredients and mix them around so they are all covered

Add salt and pepper to taste, along with the gluten-free fajita seasoning mix

Toss again to make sure the seasoning is even

Put the peppers, onions, and chicken that has been marinated on the wet wooden skewers one after the other

Warm up your grill or grill pan over medium-high heat

Put the skewers on the grill and cook for 12 to 15 minutes, turning them over every so often, until the chicken is cooked all the way through and the vegetables are soft and slightly charred

Once the skewers are done, take them off the grill and let them rest for a few minutes

Put the gluten-free chicken fajita skewers on a platter and serve them with salsa or your favorite gluten-free dipping sauce
